Indulge in this tasty, easy-to-make cake. The pineapples add a citrus twist to it, this is a winner. You can eat this cake on its own or with your favourite ice cream. Enjoy!
Ingredients
For the topping
50g margarine
50g sugar
1 cup roughly chopped pineapples
For the cake
100g margarine
100g sugar
100g all-purpose flour
1 teaspoon baking powder
2 eggs
Method
For the topping
Beat 50g margarine and 50g sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 6-inch tin (1/2kg cake tin). Arrange the pineapple pieces on top, reserving the syrup for later.
For the cake
Place the margarine, sugar, flour, baking powder and 2 eggs in a bowl along with 2 tablespoons of the reserved pineapple syrup. Beat to a soft consistency.
Spoon into the tin on top of the pineapple and smooth it out so it’s level. Bake for 50 minutes. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream or leave to completely cool and enjoy on its own.
