Chocolate and Nut Brownie Cake

Welcome to chocolate land. A land of deliciousness and indulgence. Today’s recipe is an easy to make cake that this choco-full and moist. If you are a beginner, this is the cake for you; few ingredients and maximum flavour. The nuts take the cake to the next level. Enjoy!

Chocolate and nut brownie cake (1 kg)

Ingredients

10 tablespoons margarine

1 cup sugar

4 eggs

 1 1/2 cups all purpose flour

 1 tablespoon baking powder

4 tablespoons cocoa powder

2 handfuls of crushed peanuts

Desiccated coconut for decorating

Method

1. Add margarine and sugar to a bowl. Add the eggs and mix them together.

2. Add flour, baking powder and cocoa to another bowl.

3. Add the flour and cocoa mixture to the margarine, sugar and egg mixture. Add peanuts.

4. Put the mixture into a greased and floured baking tin.

5. Bake for 1 hour.

6. Sprinkle with desiccated coconut and serve.

Happy new week! We hope you’ve had a wonderful weekend and are ready to face the week with enthusiasm. Today we are all about business, with a focus on the young entrepreneur. Has entrepreneurship been on your mind lately, have you just begun business and need some guidance on how to go about it? Look no further, here are some top tips to help you in your business journey:

1. Do what you are passionate about: This is very essential when you are beginning your business and even as you keep going. Business looks very glamorous with plenty of free time and easy money. The reality is that you have to put in long hours, chasing clients, getting knocked back, and struggling to establish yourself in a competitive market. Once you establish a niche market, you will need to have a unique value proposition (the value your business promises to deliver to customers should they choose to buy your product/service.)

2. Define what you want: As an entrepreneur, you are serving your clients, not just making money for yourself. What sacrifices are you willing to make for it to succeed? Entrepreneurs are extremely focussed and single-minded. You also have to be prepared to accept defeat as well as enjoy the wins, and move on without wavering.

3. Check your attitude: Starting your own business at a young age or about to start one, shows that you are confident. It is important to have self-confidence but ensure that it doesn’t appear as arrogance to clients, suppliers and contacts, as arrogance. Also, along the business journey, there will be challenges that may affect your confidence. Don’t stay down for long, pick yourself up and move on. Remember, your identity is not in the business, you are a great individual who owns a business.

4. Market, market, market: You will always be your greatest salesperson, so talk about your business to as many people as you can. You can even be your own brand ambassador, say you are a designer, wear your own clothes. Take advantage of social media and market there. Market on the ground as well as online. Marketing is a continuous process, even as the business grows hire marketers.

5. Be kind to yourself: As a young entrepreneur, you may have a huge to-do list and be full of energy but running a business can be exhausting. Take care of yourself, take time to eat a healthy diet instead of quick fast foods, exercise, speak life to yourself and rest and recharge. There may be a lot to do, tasks that can’t be ignored but you can reschedule them for later. Not treating everything as an emergency allows you to relax and focus on the tasks you have at hand with ease and enjoy doing them.

Scripture Sunday: Loving one another

There is so much scripture in the Bible about Love. God is love and we as His children need to act in it. “Love the Lord your God with all your heart and with all your soul and with all your mind and with all your strength.’’ This is the first commandment, giving our everything to God, loving Him with our whole being. The second commandment is, “Love your neighbor as yourself.” God wants us to love each other as we love ourselves; how powerful! The world is so in need of Love right now. We are Christ’s ambassadors; His hands and feet and need to share His Love. Here are some ways you can show love to others:

1. Encourage one another: We need to support one another and build each other up. Romans 15:5, “May the God who gives endurance and encouragement give you the same attitude of mind toward each other that Christ Jesus had.”

2. Care for other people’s needs: We should be each other’s keepers looking out for one another. The early Christians in Acts 2:9-10 cared for each other and shared the necessities of life. We, however, need to be wise and discerning, as we give money and possessions.

3. Welcome people like friends: It’s all about attitude. We should have a Christ-like attitude that welcomes people rather than excludes them. We all have the same intrinsic value and we are all in need of God’s grace.

4. Keep your promises: We should keep our word as this not only shows our respect for truth but helps build trust in our relationships. It takes love to consider our words and actions so deeply before we choose to speak.

5. Forgive one another: It is important to forgive others when they wrong us as this sets us free and brings us closer to God. We should bear with each other. Sometimes it’s necessary to change relationships and love from a distance. However, do it with forgiveness in your heart.

Self Care Saturday: Relax

With so much to do and so many deadlines to beat, it’s necessary to take time off for yourself. If there is anything that the pandemic taught us, it’s that we cannot control life, that things could go wrong, but we will survive and overcome. We have learnt that being with loved ones; family and friends really matters. We now appreciate, even more, the free things in life, health, peace of mind, love. As the world reopens; hence getting busier, may we not lose the vital lessons of slowing down and appreciating what we have at this moment. So today, we are all about relaxing, taking some time off to ourselves. Here are our five top tips:

1. Sleep in a little more: Try to go to bed earlier and even wake up a little later, especially if you do not have an early morning. Sleep is very healing, emotionally, physically, spiritually and mentally. You realise that our bodies tend to give us a signal to go to bed but we sometimes ignore that and insist on catching up with social media, a movie etc. There is no problem with that, however once in a while, switch everything off and go to bed when you feel like it. You will thank yourself, in the morning.

2. Take time for your hobbies: Carve out some time to do what you love to do. You could set aside e.g 2 hours a week for that. Hobbies are very relaxing and enjoyable. They slow you down and enable you to tap into other things you love doing besides work. Who knows, you may develop a side hustle from your hobby.

3. Do nothing: Yes, nothing. Have a few minutes where you switch off your mind and just be present. You can go to a different room or step outside just to breathe. Small breaks like this are very rejuvenating.

4. Ask for help: We all need help. No man is an island. Asking for help relieves us from the stress of feeling like you need to have it all figured out. It also allows your loved ones an opportunity for them to bless you with the gift of their time and resources.

5. Pray: Prayer offers amazing rest. There is a lot to deal with in life and telling God about it all gives us the strength, ability and assurance to keep going. There is so much peace in surrender, knowing that God’s got you and you can always lean on Him.

Animal print: From leopard to cheetah, zebra to snake print, there is a wide variety of animal print in the market. This print is classic, it’s a bold print and you can express yourself in different colours.

 Stripes: Stripes are here to stay. Available in a variety of colours and widths, stripes will never go out of fashion. Vertical stripes give a taller, slender illusion, whereas horizontal ones carry the eye across, giving an illusion of breadth.

Meet Model Nemali Mulati

“I was dared by a friend to go for auditions at an agency and that’s how I got my first modeling contract at House of Legacy. It’s my 4th year in the industry. The fashion industry is a competitive place to delve into, there are ever-changing trends (i.e Reels, TikTok, YouTube shorts), new faces and emerging brands every day. I have had to learn what works for me and what doesn’t as time goes by. I also put my best foot forward, put my priorities straight, network as much as I can and put myself out there,” says model Nemali Mulati. She is a passionate model, who began her career in January 2018.

Nemali showcased during the Skins Diversity in Fashion, show where she got to work with Brands like Couture by Rynna, Ecouture-Kenya (the bold woman fashion) and The Seamstress Kenya. She also got to walk for Romeo Paul designs from Qatar and my fashion brand, Ruth Yole at the Entreprenuer Fashion Week. Besides strutting the runway, she has worked with Magical Kenya as a WRC (World Rally Championship) hostess during the Safari rally. Brands she has worked with include Vivo Woman and Shop Zetu.

Modeling for Ecouture-Kenya

“At the beginning, I didn’t know what worked for me, I was still trying to find my seat at the table. Balancing school and modeling; sometimes classes and shows clashed, I’m glad to have recently completed my studies,” says Nemali, who holds a degree in Bachelor of Science in Procurement and Contract Management. Sometimes she feels underlooked by brands especially when there’s preferential treatment but she’s learned how to deal with it. She loves experimenting with her hair, trying out different hair dyes and also styles her hair in bold colors. It’s her form of expression.

 Advice to upcoming models, “Whatever makes you unique is your superpower, don’t be afraid to stand out. Put yourself out there and strive to be better every day. Build your portfolio too.” Nemali’s desire to be better every day is her biggest motivation. She has her long-term and short-term goals and they keep her on her toes. Her support system, family and friends, also keep her in check.

Upside-down pineapple cake

Indulge in this tasty, easy-to-make cake. The pineapples add a citrus twist to it, this is a winner. You can eat this cake on its own or with your favourite ice cream. Enjoy!

Ingredients

For the topping

50g margarine

50g sugar

1 cup roughly chopped pineapples

For the cake

100g margarine

100g sugar

100g all-purpose flour

1 teaspoon baking powder

2 eggs

Method

For the topping

Beat 50g margarine and 50g sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 6-inch tin (1/2kg cake tin). Arrange the pineapple pieces on top, reserving the syrup for later.

For the cake

Place the margarine, sugar, flour, baking powder and 2 eggs in a bowl along with 2 tablespoons of the reserved pineapple syrup. Beat to a soft consistency.

Spoon into the tin on top of the pineapple and smooth it out so it’s level. Bake for 50 minutes. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream or leave to completely cool and enjoy on its own.

An Afro-textured Hairy Situation

Today we are all about hair. We have been gifted with such glorious hair and we have different variations. Afro-textured hair appears dense, each strand of hair growing in a tiny, angle-like spiral shape. We mainly have 4 types of hair namely, kinky-coily, which is tightly coiled, curly which as the name suggests has curls, wavy, defined by waves and straight. These are broken down further into “types”

1. Kinky-Coily hair

Type 4c: Hair that is tightly coiled and has more of a very tight “O”-shaped pattern.

Type 4b: Tightly coiled hair that has a less-defined kink pattern. Has more of a “Z”-shaped pattern.

Type 4a: Hair that is tightly coiled and has a very defined “O”-shaped pattern.

2. Curly hair

Type 3c: Defined by tight curls in corkscrews.

Type 3b: Has a medium amount of space of the curls. Can have a combined texture.

Type 3a: This hair type is thick and full with much body. Has a definite curl pattern. The hair tends to be frizzy and can have a combination texture.

3. Wavy hair

Type 2c: The hair has wider waves and tends to be frizzy.

Type 2b: The hair has more of a defined “S” pattern and tends to be frizzy.

Type 2a: Has a Loose “S” pattern and sticks close to the head.

4. Straight hair

Type 1c: Straight hair. It is coarse and bone straight.

Type 1b: Has much body, more volume and fuller.

Type 1a: Is very soft and shiny. The hair tends to be oily and hard to damage.

We have been styling our hair using hot combs, having dreadlocks and the Afro hairstyle which emerged in the 1960s.

Afro-textured hair care has evolved over the years with braiding, weaving, short hair cuts, and rocking completely bald heads as is popular now. There are so many products in the market to cater to this glorious hair. Our hair is beautiful, unique and diverse and we should wear it with pride.

Tree Planting, an antidote to poverty and climate change.

We are living in very desperate times where everybody is trying to do the best they can to survive. Care for the environment has become a foreign concept for most people as they continue to indiscriminately degrade it in an attempt to make a living. Nature which is very unforgiving continues to suffer in silence as it wonders how we will handle the shock that awaits us. There are already serious symptoms pointing to the effects of an overstretched ecosystem. Governments and international communities are moving with speed to try and alleviate the repercussions of our own undoing. Issues of climate change have become so apparent that everyone is worried about the kind of planet we are going to bequeath to future generations.

Do we have answers to these problems? Yes, we do! A problem whose cause is known is on its way to being solved. We just need to be honest with ourselves and do the necessary- be kind to the environment. If we cannot feed the cow, we have no justification for milking it. It is high time we started doing the simple things that matter.

The government of Kenya through the Kenya Forest Service came up with a project dubbed the National Tree Planting Campaign (NTPC) that would see the country attain a 10% forest cover by 2022. This is one of the remedial strategies to restore our green cover. To achieve such an ambitious target in a country that is 80% arid and semi-arid (ASAL) it will require a lot of concerted efforts from both public and private sectors. A lot is happening in this respect but there is a great need for contextualizing the efforts from a localized sense. As the national and county government agencies continue to rally us to plant 1.8 billion trees by next year, we have to be extremely committed to this course.  

Planting these trees has several beneficial effects apart from helping to fight climate change and reduce global warming.  Below are some of the economic benefits:

  • Planting of fruit trees such as avocado, mangoes, oranges among others provide food which can be consumed by families and the surplus sold for income. We need to plant these trees with an intention of meeting the huge demand that the market offers.
  • Fast maturing trees like eucalyptus can be planted on dedicated parcels of land. Within a period of 5-10 years these trees are ready for selling. Bulk selling of these trees offers very good returns. One can then reforest the parcels of land.
  • Trees offer cheap source of fuel to families. One does not need to cut the whole tree but only prune old branches.
  • Some trees such as River Tamarind also known as Leuceana offer good forage for livestock. It is a good agroforestry tree.
  • Establishing of tree seedlings is an economic activity most young people can tap into. These nurseries are going to provide the billions of seedlings demanded by both public and private sector.

No one can go wrong by planting trees. You just need to start where you are. The best time to plant a tree is now. One of the best ways of demonstrating selflessness is planting trees under whose shade you may never sit.
