Baked or Fried? Delicious Samosa Recipe

Ingredients

1 cup flour + 2 extra tablespoons

2 tablespoons oil

Water

250g minced meat

1 onion

1 teaspoon garlic powder

1 stalk of dhania

Black pepper to taste

Salt to taste

If frying:

Oil for frying

If baking:

A little oil for greasing the baking tray

1 egg

Water

Method

Make the dough

1. In a bowl add the flour, salt and 2 tablespoons of oil.

2. Rub the oil and flour using your hands. This will make the samosas flaky and crunchy.

3. Add enough water to make dough.

4. Knead until smooth and soft.

5. Cover the dough in a bowl and let it rest for 20 minutes.

Meanwhile, make the filling

1. In a sufuria add oil.

2.  Add in the onion and meat. Once the meat is brown, add in the garlic powder, black pepper and salt and mix together.

4. Cover and cook for 3 minutes.

5. Add in the dhania and cook for 2 minutes and remove.

Assembling the samosas

1. Knead and divide the dough into 3 pieces.

2. Make flour paste: In a bowl, add 2 tablespoons of flour and a little water. Mix together. This will act as the glue.

3. Thinly roll out each piece of dough, about 22 cm in diameter.

4. In a pan over high heat, place one of the circles of dough and cook for 10 seconds on each side. Repeat with remaining dough.

6. Cut one of the circles into four quarters. Fold to create a cone-like pocket. Seal the edges with flour paste.

7. Fill the pocket with the filling, then fold the remaining tip and seal with flour paste. Repeat with the remaining dough and filling.

If baking

1. Grease the baking tray. Use a brush to spread the oil.

2. Make egg wash. In a bowl add the egg and water. Mix together. The water thins the protein so you get a nice glaze. Apply on each samosa.

3. Bake at 160 degrees for 25 minutes or until golden.

 If deep frying

1. In a pan, add oil and heat.

2. Add in the samosas. Fry for about 5 minutes, flipping once, until light golden brown. Remove from oil and drain on a serviette or paper towel.

Happy Wednesday! Today’s recipe is super easy to make and delicious. We use a grill pan for this recipe to give the meat that char. A grill pan is a perfect substitute for a grill, especially if you don’t have time to light up an entire one. Enjoy!

Ingredients

½ kg chicken

1 teaspoon dried coriander

1 teaspoon oregano

1 teaspoon garlic powder

Salt to taste

Oil for frying

Method

  1. In a bowl, add in coriander, oregano and garlic powder. Season both sides of the chicken with the seasoning mix. Add salt.
  2. Heat a grill pan. Add the oil and coat thoroughly.
  3. Add the chicken and cook on both sides, pricking with a skewer for even cooking.
  4. Serve with ugali or chips. Enjoy!

Easy and Indulgent Goat Curry

500g goat meat

1 large chopped onion

1 large chopped tomato

4 cloves crushed garlic

1 tablespoon crushed ginger

2 tablespoons curry powder

1 bunch of dhania, chopped

Black pepper to taste

Salt to taste

Oil for frying

Method

  1. In a sufuria, add oil. Add in the onion and goat meat. Cover and cook for 10 minutes till brown.
  2. Add in the tomato, garlic and ginger. Mix together. Add in water and cover. Cook for 20 minutes till ready.
  3. Add in the curry powder and black pepper. Mix together. Add in the dhania. Cover and cook for 3 minutes.
  4. Serve with chapati or rice. Enjoy!

Quick and Yummy Pork and Noodle Recipe

Happy Tuesday! We hope your week is off to a good start. Today’s pork and noodle stir fry recipe is the perfect quick fix for lunch or dinner. Delicious and fun to make. Enjoy!

Ingredients

200g pork steak

120g instant noodles (Indomie jumbo pack)

1 chopped onion

2 cloves of grated garlic

1 carrot cut into strips

Oil for frying

Salt to taste

Dhania for garnish

For the sauce

1 tablespoon of golden syrup/ honey

1 tablespoon of soy sauce

1 teaspoon of grated ginger

Black pepper to taste

Method

1. Make the noodles as per the instructions on the pack.

2. Drain the noodles and set aside.

3. In a sufuria add oil and onion. Add in the pork and cook for 20 minutes.

4. Meanwhile make the sauce. Mix the golden syrup/ honey, soy sauce, ginger and black pepper in a small bowl and set aside.

5. After the 20 minutes are done, add the garlic and carrots and cook for 3 minutes.

6. Add the cooked noodles, pour the sauce on top and mix. Add in salt.

7. Cook for a few minutes. Serve and garnish with dhania. Enjoy!

1 red capsicum chopped

1 onion chopped

1 teaspoon soy sauce

1 teaspoon of oregano

Method

  1. In a pan, add oil.
  2. Add in the potatoes and fry for 5 minutes till golden.
  3. Add in the minced meat, garlic, capsicum and onion. Mix, cover and cook on low heat for 10 minutes.
  4. Add in soy sauce, oregano and black pepper.
  5. Add in water and cook for 10 minutes till ready. Add in salt.
  6. Garnish with dhania. Enjoy!

Delicious Easy Fish Cake Recipe

Happy Tuesday! Today’s recipe is an easy, delicious fish cake recipe. The fish cakes are golden brown on the outside and tender and flaky on the inside. Enjoy!

For 8 fish cakes:

Ingredients

200g fish fillet

5 small potatoes

1 egg

1 chopped onion

½ bunch chopped dhania

1 tablespoon margarine

2 tablespoons breadcrumbs + extra for coating

Salt to taste

Method

  1. Peel the potatoes. Salt and boil them for 15-20 minutes till ready.
  2. In a sufuria, add fish and a little water. Add salt. Steam for 15-20 minutes till ready and tender.
  3. In a bowl add the potatoes and mash with a fork. Add the fish and flake with a fork. Add in the margarine. It adds a buttery taste to the fish cakes and makes all the difference.
  4. Add in onions and coriander and mix together.
  5. Add in egg and mix. Add in breadcrumbs.
  6. Mix together and make balls and flatten. You will have 8 cakes in total.
  7. Roll over each fish cake on a plate with breadcrumbs for extra coating.
  8. Shallow fry in a pan.
  9. Serve with rice or chips. Enjoy!

Heart warming beef stew recipe

Ingredients

250g beef

1 large chopped onion

4 small chopped carrots

2 tomatoes

¼ root crushed ginger

4 cloves crushed garlic

1 tablespoon soy sauce

1 bunch dhania

2 tablespoons wheat flour

Oil for frying

Salt to taste

Method

  1. In a sufuria, add onion and meat.
  2. Add in the garlic and ginger and stir. Cover and let the meat cook for 5-10 minutes till brown.
  3. Add in the carrots and a little water. Let them soften for 10 mins, then stir in 2 tablespoons of wheat flour until it no longer looks dusty.
  4.  Add in tomatoes and soy sauce and mix.
  5. Gradually stir in hot water just enough to almost cover the meat. Use hot water to prevent formation of lumps when water mixes with flour.
  6. Cover and cook for 25 minutes on low heat till ready.
  7. Add in dhania and salt and leave some for garnish. Cook for 5 more minutes.
  8. Garnish with remaining dhania.
  9. Serve with rice or chapati. Enjoy!

Ingredients

For 12 meatballs:

300g mince meat

6 tablespoons breadcrumbs

1/3 cup water

1 egg

1 bunch chopped dhania

1 chopped onion

1 tablespoon garlic powder

Oil for frying

Black pepper to taste

Salt to taste

For the sauce

1 chopped onion

3 chopped tomatoes

Method

  1. In a small bowl, add breadcrumbs. Pour in the water and stir to combine. Set aside while preparing the rest of the meatball mixture. The breadcrumbs will absorb the water and therefore bind to the mixture better. They also make the meatballs moist, as the meat does not dry out while frying.
  2. In a bowl add the egg. Beat the egg and add dhania, garlic powder, black pepper and salt.
  3. Add the mince meat. Use your hands to thoroughly mix the egg mixture into the meat.
  4. Add the onions and soaked breadcrumbs. Mix them into the meat with your fingers. Try not to overwork the meat.
  5. Form the meat into meatballs. Using a tablespoon, scoop the mixture and gently roll between your hands. Continue shaping until all the meat is used, placing them on a separate plate. They will be 12 in total.
  6. In a pan add oil. Once the oil is hot, add in the meatballs and fry till brown on both sides. Remove and set aside.

Make the sauce

  1. In the same pan, add oil. You want to retain all the goodness of the meatballs, so don’t wipe it.
  2. Add in the onion. Fry till golden brown.
  3. Add in tomatoes and cook them down.
  4. Add in a little water. Add the meatballs. Cover and cook under low heat for 20 minutes till done.
  5. Serve with mashed potatoes, spaghetti or rice. Enjoy!

Happy Friday! Today’s recipe is an easy-to-make crunchy bread-crumb-coated chicken recipe. Using few ingredients to make, this chicken is juicy on the inside and crunchy on the outside. Absolutely yummy. Enjoy!

Ingredients

1/2 chicken

1 large onion

6 cloves of crushed garlic

Breadcrumbs

2 eggs

Oil for frying

Black pepper to taste

Salt to taste

Method

  1. In a sufuria, add a little oil, onion, chicken, garlic and black pepper. Mix together.
  2. Cover and cook for 25 minutes till ready.
  3. Add the breadcrumbs to a plate.
  4. Beat the eggs and add to a separate plate.
  5. Roll over each piece in egg first, then dip in the breadcrumbs. Repeat till done.
  6. In a pan, add in the oil. Let it heat up and test using a few crumbs. When bubbles appear around the crumbs, your oil is ready.
  7. Add in the chicken. Fry till golden brown on both sides.
  8. Remove and transfer to a plate lined with serviettes.
  9. Serve with chips, potatoes or rice. Enjoy!
